Honey Glazed Carrots with Ginger, Garlic, and Onions ... All the good stuff

Well, I'm not bragging BUT, hey ... I'm really not ...
it was good ! Just trying to get your attention so you'll
try this recipe of mine ... I now have no excuse NOT to
eat carrots for lack of an interesting and flavorful way
of cooking carrots.Have Liked em' mostly uncooked, fresh.

Great fiber ... carrots are a good source of vitamin
A for eye health ... remember the importance of retina
health ...

Came up with this carrot dish for lunch today , and
my buddy Beth really loved it ...

Awesome Beth keeps saying I should go to culinary school ...

Ok , here goes ...

' California Honey Glazed Carrots '

Ingredients :

6 -7 carrots , fresh
3 slices sweet onion
3 tablespoons honey
1 large clove ( single
section garlic
1 teaspoon powder ginger
2 tablespoons unsalted butter
1/4 cup water

----------------------------------------

Instructions :

1 ) Wash carrots.

2) Peel carrots, then cut off ends.

3) Cut each carrot into 3 even
lengthwise sections. Cut each
section in half, then cut each of
those sections in half. Basically
you have thick Julien cuts.

4) Cut 3 or more slices sweet onion depending
on how much onion want you can use more

Cut slices thin - medium, not too thick ( so
you have 3 sections layered circles ), then
cut each slice in half.

5 ) Clean and dice up garlic clove.

6 ) Start steaming carotts, total 10 minutes.

7 ) While carrots are steaming, put butter
in small frying pan and begin saute'
onions, on high a few minutes to
brown, then turn down heat.

8) When onions are 2/3 done, put in garlic.

9) Sprinkle half teaspoon Ginger into the
frying pan onion and garlic saute', stir.

10) Add 1 and 1/2 teaspoon honey, add 1/4
cup of water, then let onion, garlic , and
ginger, and honey saute' till onions are
done.

11) When onions are done, save saute' juice by
draining onion,and garlic with spatula, press
onions against side of pan then set onions
and garlic aside in small bowl.

12 ) When carrots are done steaming, place them
in the saute' juice in the frying pan.

13 ) Turn heat up to brown carrots on one side in
frying pan.

14 ) Add 1 and 1/2 teaspoon honey, turning
and glazing the carrots.

15 ) Add 1/2 teaspoon of Ginger powder to carrots.
Turn carrots with a spatula, continuing to glaze
the carrots.

16) Add the onion and garlic to the carrots, blending
the flavors and heating together, then serve.

Made this cooked with main dish of Talapia
( Using Basa fish is better )
cooked in white wine in the microwave ...

1 ) 2-3 fillets Basa fish in casserole dish,

2) Mix 1/3 cup white wine with 2 tspns flour, 2 tablespoons
cream ( use milk if no cream - did ),
3) Pour over fish,

4) Top w/ 2 green onions sliced - are long ones w/ white top,

5) Sprinkle 1/2 bay leaf over or oregano ( used oregano tonight ),
1 Tsp parsley flakes ( dry ) or 1 Tablespoons minced Parsley

6) Cook in microwave 5 min.Yes !

Side dish - White rice. The Safeway brand
of instant long grain white rice is really good.
It's the best I've have had, is sweet, nice.

Melted 1 teaspoon of unsalted butter in
the rice after rice was done.

Dessert : A big kiss to you, from your sweetheart ,for
making her a nice lunch or dinner !
